100% Chardonnay
The grapes are sourced from a 2.5-hectare vineyard (6.4 acres) from the village part of Chapelot surrounding a little chateau that you can see from the top of the Grand Cru hill. This vineyard sits just opposite Blanchots, within the original historic Chablis AOC boundaries. The soil is composed of 100% Kimmeridgian limestone with a bit more clay than other parts of Chablis; the soil dates back to the 200-million-year old Jurassic period.
The Chablis Terroir de Fyé opens in the glass with notes of crisp green orchard fruit, mint, oyster shell and white flowers. Medium to full-bodied, chiseled and concentrated, it’s seamless and complete, concluding with a saline finish. As readers will remember, this bottling derives from the lower portion of Chapelot that isn’t entitled to the premier cru appellation. Robert Parker – 91
